Each year Brittany
provides 30% of the 140,000 tonnes of oysters produced by France.
Production is split between two major areas: northern Brittany, including
the bays of Cancale, St Brieuc and Morlaix, and southern Brittanny and the
Morbihan estuaries.
The Bretons enjoy eating oysters throughout the year, but they are particularly associated with Christmas and New Year, and oyster-farmers make about half their turnover during the festive season. |
